UTILIZATION OF TOFU DREGS WASTE INTO ECONOMICALLY VALUABLE NUGGETS IN PURWOASRI VILLAGE
Abstract
The observation results reveal that the residents of Purwoasri, the majority of whom work as tofu makers, have not yet optimally utilized tofu dregs waste. Tofu dregs are only used as animal feed and oncom ingredients, despite their high nutritional content, especially protein. This community service initiative introduces an innovation in processing tofu dregs into economically valuable nuggets by adding simple ingredients such as chicken, carrots, and scallions. This innovation is expected to enhance the usability of waste, maximize local resources, and support the local community's businesses.
